Our kitchen shares the same culinary foundation and philosophy as our sister restaurant - Lim Dining Room. Inspired by the traditions of Italian cooking, we believe that exceptional ingredients, skilled craftsmanship, and respect for simplicity are the cornerstones of a memorable dining experience.
Our menu is designed with sharing, conversation, and wine in mind. From handmade pasta and artisan pizza to seasonal specials and classic Italian favourites, every dish is created to complement the wines we serve while remaining satisfying in its own right.

Wine is at the heart of Vincognito. Recognised by the Wine Spectator Award of Excellence and Star Wine List, we have built one of Central Vietnam's most comprehensive wine programmes, featuring more than 130 wines by the bottle and over 20 wines by the glass.
Our philosophy is simple: offer exceptional wines, thoughtful recommendations, and an atmosphere that encourages exploration without intimidation. From iconic producers to hidden gems, every wine is selected for its quality, character, and ability to create memorable experiences around the table or bar counter.
HOST
Carl Thomas
Carl, your personable host behind the bar, began his career in the food and beverage industry at the age of 16 in his hometown of Leeds, UK. Working his way through the ranks the good old-fashioned and hard-earned way from scrubbing dishes to management responsibility at his local bar where he stayed on for several years as the manager and host.
After a six-month tour of Southeast Asia, Carl found himself in Sapa, where he spent the next seven years. First managing The Hill Station before founding his quirky and beloved burger joint, Pomelo, in the picturesque village of Ta Van.
Wine, vinyl and art are three of the concept cornerstones of Vincognito and with Carl being a wine loving, vinyl collecting graduate from Leeds college of Art and Design, we would say it is a match made in wine heaven.
